i told her i couldn’t make it to the movies but we could go next week or tomorrow does she really want to go or no she used to be my girlfriend but we never went out on a date this would be the first time we seen each other in three years since middle school

    It probably means that she was looking forward to seeing you again after so long and she is a little disappointed that you had to cancel/postpone the date.

    If you already told her you would go to the movie on one day and then switch and she said ok i guess. i would say she is upset about the fact that u changed days on her.

    It means she thinks your blowing her off. “ok i guess” is what a girl says when shes disappointed, but ok with it and understands sorta. its just not the answer that she wanted to hear.
