Pastrami is a cured and smoked beef brisket with a pepper coating that is steamed before slicing, Bologna is an emulsified sausage where the meat is finely ground to a paste, in cased in either natural or plastic casing, smoked then cooked either with steam or heat, Salamis can be from beef, pork or a combination, some are cured and air dried never cooked and others like Bologna is mixed and cooked, smoked and slightly dried

All of these meats are pre-cooked…not raw. Salami is like a sausage type meat – kind of like pepperoni.

Bologna is processed meat – it is a combination of meats and by products pressed and folded together….kind of like a giant hot dog.

Pastrami is like smoked meat – it is usually sold in slices – primarily used in sandwiches.

They are cooked. Bologna tastes like a hot dog. Salami is peppery, and often you can see the pepper. Pastrami is milder, has some mild spices.
