I have an LG Env3 (I doubt the phone model information is important.) I have been going through my settings, and I came across NAM Select. I know very little about it. Although once you change it to the non-normal setting, I believe that you go into roaming mode. Please correct me if I am wrong. Also, I believe that the phone number gets changed. Can you please explain to me in detail what exactly happens when I switch over, and if I should be careful of anything? Thank you for your help.

Dont mess with your NAM setting at all. It can greatly affect how your phones works. Should always be on NAM1, and the number under nam may be different than your phone number but thats ok.
There is no reason to change these unless you live on a country boarder like Washington/Canada…or Mexico/US. Even then….

Number Assignment Module.
A part of the phone that stores a wireless device’s phone number, lock code, timer reset code and other user information.
Useful if you know why and what you are doing.
You could get two phone numbers and set up separate billing for any creative reasons.
Perhaps for separate roaming areas to prevent exorbitant roaming charges by having a number for each area.
Chat with tech support at your providers to see if you care to have two numbers on one phone, and consider what you would do with them.
Just go back to NAM selection and put it back to what it was before you switched it, should be NAM 1.
