David Lange’s Nuclear Free Chicken with Plum Sauce
6-8 chicken wings
2 tablespoons oil
2 tablespoons plum jam
1 clove garlic, finely chopped
1 teaspoon fresh ginger, grated
1 tablespoon raw sugar
1/4 cup soy sauce
1/4 cup lemon juice
fresh ground pepper, to taste
1 cup chicken stock
Marinate the wings for 2 hours.
Fry or grill chicken wings.
Make sauce with marinade by adding chicken stock to marinade and bringing to boil in a pot.
Thicken with a little cornstarch
1/2 cup mayonnaise
1/4 cup Heinz ketchup
1/2 teaspoon garlic powder
1/4 teaspoon worcestershire sauce
lots of black pepper
Mix together the mayo, ketchup and garlic powder blending well. Add worcestershire sauce and blend well. Cover surface of sauce with black pepper until just coated. Blend well. Repeat process covering surface of sauce with
black pepper and stir until blended well. Refrigerate for at least two hours prior to use to allow the flavors to mingle. Serve with chicken fingers!
