I’m having a party for my son (deployed to Baghdad in June) and I’ve invited about 125 people. I’m having hot dogs, chicken fingers, sausage & peppers. I was wondering how many pounds of roast beef to get for hot sandwiches to round out the selection. (I’ll have the usual cold salads too). Thanks!

It depends on the sandwiches, the crew you’re feeding, and if it’s lunch or dinner. Just to be on the safe side, I’d do at least seven pounds (before cooking) of boneless roast. It will shrink. Also consider whether a pork roast might be better. Pork has more flavor than beef. As far as time goes, the longer the better. We’ll put a large thawed roast in a 5 or 6 qt crockpot (use the smallest crockpot that it will fit in) before bedtime and let it cook on low overnight. Slice up an onion to go in the bottom, put in the roast with a half dozen whole cloves and cover with water. In the morning, pull out the roast and clean out the crockpot while the roast cools a little. Remove bone and excess fat, coarsely shred the meat, and return it to the clean crockpot. Add whatever seasonings you want (we use a large bottle and a half of BBQ sauce) and turn the crockpot back on low. Stir occasionally. If you use a high sugar sauce, stir more often to prevent burning. In four to six hours, it’s ready to eat. The longer it cooks the more the flavor penetrates the meat and the finer the shreds become. If there’s any that doesn’t get eaten, it freezes beautifully.
